Croatian Paella with Roasted Vegetables
A hearty and flavorful paella dish with a twist of Croatian cuisine, featuring wholesome ingredients and crispy roasted vegetables.
Ingredients

- β2 tablespoons Wholesome Olive Oil
- β1 teaspoon Croatian Paprika
- β1 medium Oniondiced
- β2 cloves Garlicminced
- β2 medium Roasted Red Peppersdiced
- β1 can Artichoke Heartsdrained and chopped
- β1/2 teaspoon Smoked Paprika
- βto taste Salt

Heat the olive oil in a large paella pan or skillet over medium-high heat.

Add the diced onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the roasted red peppers, artichoke hearts, smoked paprika, and Croatian paprika. Cook for 2-3 minutes, until the vegetables are well combined.

Add the paella rice and cook for 1-2 minutes, until the rice is coated in the oil and slightly toasted.

Add 2 cups of water to the pan and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.
