Italian Lentil Stamppot
A hearty and comforting Italian-inspired dish made with lentils, wholesome ingredients, and a hint of Dutch stamppot tradition.
Ingredients
- β1 cup Lentilsgreen or brown lentils
- β2 tablespoons Wholesome Olive Oilfor sautΓ©ing
- β2 Dutch Stamppot Potatoesdiced or sliced
- β1 Onionchopped
- β2 cloves Garlicminced
- β2 tablespoons Tomato Pastecanned or fresh
- β1 teaspoon Italian Seasoningdried herbs
- βto taste Salt
- βto taste Black Pepper
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the diced potatoes and cook for 5 minutes, stirring occasionally.

Add the lentils, tomato paste, Italian seasoning, salt, and pepper. Stir to combine.

Add 4 cups of water to the saucepan and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes or until the lentils are tender.

Stir the mixture occasionally to prevent sticking.
