Cassava Pesto Pasta
A simple and flavorful Italian-inspired dish made with cassava pasta, homemade pesto sauce, and wholesome ingredients.
Ingredients
- β12 oz Cassava Pasta (12 oz)Available in most health food stores or online
- β1/2 cup Homemade Pesto Sauce (see note)Make sure to use fresh basil and parmesan cheese for the best flavor
- β3 cloves GarlicMinced
- β1 cup Cherry TomatoesHalved
- β1/4 cup Fresh BasilChopped
- β1/4 cup Parmesan CheeseGrated
- β2 tbsp Olive Oil
- βto taste Salt
- βto taste Black Pepper
Instructions

Bring a large pot of salted water to a boil and cook the cassava pasta according to package instructions.

While the pasta is cooking, heat the olive oil in a pan over medium heat.

Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the cherry tomatoes and cook for 2-3 minutes until they start to release their juices.

Stir in the homemade pesto sauce and cook for an additional 1-2 minutes.

When the pasta is done cooking, drain it and add it to the pan with the pesto sauce.

Toss the pasta in the pesto sauce until it's well coated.

Season with salt and black pepper to taste.

Serve hot, topped with chopped fresh basil and grated parmesan cheese.
