Peruvian Quinoa Salad
A vibrant salad made with quinoa, wholesome ingredients, and inspired by Peruvian flavors.
Ingredients
- β1 cup QuinoaRinsed and drained
- β2 tbsp Wholesome Vegetable Oil
- β1 medium Red OnionDiced
- β1 medium CucumberDiced
- β1 cup Peruvian CornFresh or canned
- β2 medium TomatoDiced
- β4 cups SaladMixed greens

1. Rinse the quinoa in a fine mesh strainer and drain well.

2. In a medium saucepan, heat the vegetable oil over medium heat.

3. Add the diced red onion and cook until softened, about 3-4 minutes.

4. Add the quinoa to the saucepan and cook for 1-2 minutes, stirring constantly.

5. Add 2 cups of water to the saucepan and bring to a boil.

6. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the water has been absorbed.

7. Fluff the cooked quinoa with a fork and let cool to room temperature.

8. In a large bowl, combine the cooled quinoa, diced cucumber, Peruvian corn, and diced tomato.

9. In a small bowl, whisk together a vinaigrette of your choice (e.g., olive oil and lime juice).

10. Drizzle the vinaigrette over the quinoa mixture and toss to combine.
