Saffron Mechoui Bento
A flavorful and savory dish that combines traditional Moroccan mechoui with the delicate flavor of saffron, served in a Japanese-inspired bento box.
Ingredients
- β1 block meat substitute (such as seitan or tofu)
- β1 tsp saffron threadssoak in 2 tbsp hot water
- βvaries bento box ingredients (such as steamed rice, mixed vegetables, pickled ginger)
- β2 tbsp wholesome all-purpose flour
- β1 medium sweet onionchopped
- β1 tsp box spices (such as cumin, coriander, paprika)

Preheat oven to 400Β°F (200Β°C).

In a large bowl, mix together flour, spices, and saffron threads. Add the meat substitute and mix until coated.

In a large baking dish, arrange the chopped onion in a single layer. Place the coated meat substitute on top.

Bake for 30 minutes, or until the onion is caramelized and the meat substitute is cooked through.

Prepare the bento box ingredients according to your preference.

To assemble the bento, place a portion of the mechoui mixture in the box, followed by a portion of the bento box ingredients.
