Indian-Style Peanut Chicken Curry
A flavorful and aromatic Indian-inspired curry made with peanut sauce, chicken, and a blend of spices. Perfect for a weeknight dinner.
Ingredients
- β1 pound boneless, skinless chicken breastcut into 1-inch pieces
- β1/2 cup peanutspeeled and chopped
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 teaspoons curry powderstore-bought or homemade
- β1 teaspoon garam masalastore-bought or homemade
- β1/2 teaspoon saltto taste
- β2 tablespoons peanut oilfor cooking
- β1 can coconut milkfull-fat or low-fat

Heat oil in a large skillet over medium-high heat.

Add chicken and cook until browned, about 5-6 minutes.

Remove chicken from skillet and set aside.

In the same skillet, add onion and cook until softened, about 3-4 minutes.

Add garlic and cook for 1 minute, until fragrant.

Stir in curry powder and garam masala. Cook for 1 minute, until fragrant.
