Wild Slovakian Pork Stew
A hearty Slovakian-inspired stew made with tender pork and a blend of wild, savory flavors. Perfect for a cold winter's night.
Ingredients
- β1 lb pork shouldercut into 1-inch cubes
- β2 cups wild mushroomssuch as chanterelle or cremini
- β2 medium onionschopped
- β3 cloves garlicminced
- β1 tsp caraway seedsground
- β1 tsp allspiceground
- β1 tsp saltpreferably sea salt
- β1 tsp black pepperfreshly ground

Heat oil in a large Dutch oven over medium-high heat.

Brown the pork cubes on all sides, about 5 minutes.

Remove the pork from the pot and set aside.

Add the chopped onions to the pot and cook until they start to caramelize, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the ground caraway seeds and allspice and cook for 1 minute.

Add the browned pork back to the pot, along with the wild mushrooms.

Add 1 cup of stock to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the pork is tender.
