Crispy Double Fry Fish Fillet
A Vietnamese-inspired recipe featuring a crispy double-fried fish fillet. This dish is great as a seafood option for lunch.
Ingredients

- ●1/4 cup Vietnamese Herbs (such as basil or mint)For garnish

1. Rinse the fish fillets and pat them dry with paper towels.

2. In a shallow dish, mix together the Vietnamese fish sauce and a pinch of salt.

3. Add the fish fillets to the marinade and coat them evenly.

4. Let the fish fillets marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

5. Preheat the fryer or a deep skillet with about 1/2-inch of vegetable oil to 350°F (175°C).

6. Remove the fish fillets from the marinade and coat them evenly with the double fry potato starch.

7. Fry the fish fillets in batches until they are golden brown and crispy, about 3-4 minutes per side.

8. Remove the fried fish fillets from the oil and place them on a paper towel-lined plate to drain any excess oil.

9. To make the double fry, heat about 1/2-inch of vegetable oil in a small saucepan to 325°F (165°C).
