Eastern Noodle Bowl
A hearty and comforting noodle bowl filled with the flavors of the East. Perfect for a quick weeknight dinner.
Ingredients
- β1 cup Falafelhomemade or store-bought
- β8 oz Middle Eastern Noodlesor substitute with rice or quinoa
- β2 cups Wilted Greenssuch as spinach or kale
- β1 cup Chopped Cucumberoptional
- β1/2 cup Chopped Red Onionoptional
- β2 tbsp Lemon Juicefreshly squeezed
- β1 tbsp Olive Oilfor drizzling
Instructions

Cook noodles according to package instructions. Drain and set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

Add the falafel and cook for 2-3 minutes on each side, until crispy and golden brown.

Add the wilted greens to the skillet and cook until wilted.

Stir in the lemon juice and cook for an additional minute.

To assemble the noodle bowls, place a scoop of noodles on a plate, followed by a scoop of falafel and greens.

Top with chopped cucumber and red onion, if using.
