Kyushu Udon Stew
A hearty Japanese stew made with Kyushu udon noodles, beef, and vegetables.
Ingredients
- β250g beef (sirloin or ribeye)cut into bite-sized pieces
- β200g Kyushu udon noodlesdried
- β2 carrotspeeled and sliced
- β2 potatoespeeled and cubed
- β1 onionsliced
- β20g chiveschopped
Instructions

Heat 2 tablespoons of vegetable oil in a large pot over medium-high heat.

Add the beef and cook until browned, about 3-4 minutes.

Add the onion and cook until softened, about 2-3 minutes.

Add the carrots and potatoes, and cook for 2-3 minutes.

Pour in 2 cups of beef broth and bring to a boil.

Reduce heat to medium-low and simmer for 10-12 minutes, or until the vegetables are tender.

Add the Kyushu udon noodles and cook for 3-4 minutes, or until they are cooked through.

Stir in chopped chives and season with salt and pepper to taste.
