Galangal Wood-Fired Skirt Steak
Grilled skirt steak marinated in a mixture of galangal, herbs, and spices, served with a side of Argentinian chimichurri sauce.
Ingredients
- ●1.5 pounds skirt steakpreferably grass-fed
- ●3 inches galangalgrated
- ● wood-fired ovenpreheated to 500°F
- ●1 cup chimichurri saucestore-bought or homemade
- ●1/4 cup olive oilfor marinating
- ●3 cloves garlicminced
- ●1/4 cup parsleychopped
- ●1 teaspoon saltto taste
- ●1/2 teaspoon pepperto taste

Preheat the wood-fired oven to 500°F (260°C).

In a large bowl, whisk together olive oil, garlic, parsley, salt, and pepper.

Add the grated galangal and mix well.

Add the skirt steak to the marinade and coat evenly.

Let the steak marinate for at least 2 hours, or overnight.

Remove the steak from the marinade and cook in the preheated wood-fired oven for 5-7 minutes per side, or until cooked to your desired level of doneness.

Let the steak rest for 5 minutes before slicing.
