Traditional Portuguese Beef Feijoada
A hearty, comforting Portuguese stew made with beef and beans, perfect for a cold winter's night.
Ingredients
- β1.5 pounds Beef brisket, cut into small piecesCut into bite-sized pieces
- β1 cup Dried black beans, soaked overnightDrain and rinse before using
- β1 medium Onion, choppedAbout 2 cups
- β3 cloves Garlic, mincedAbout 1 tablespoon
- β1 teaspoon SaltTo taste
- β1/2 teaspoon Black pepperTo taste
- β1 cup Red wineCan be substituted with beef broth
- β2 cups Beef brothHomemade or store-bought
- β2 tablespoons Tomato pasteTo add depth of flavor

In a large Dutch oven or pot, heat some oil over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the beef pieces and cook until browned, about 5 minutes.

Add the soaked and drained black beans, red wine, beef broth, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 2 hours.

Add the tomato paste and stir to combine.

Continue to simmer, covered, for another 30 minutes, or until the beef is tender.
