Spherified Lamb Koftas with Crisp Vegetable Skewers

- β1 cup, chopped crisp
- β1 cup, sliced winey vegetables
- β1 cup water
- β2g spherify agent

Preheat the grill to medium-high heat.

In a large mixing bowl, combine lamb mince, x, and winey vegetables. Mix well.

Add the spherify agent to the mixture and stir until combined.

Using your hands, shape the mixture into small koftas.

Thread the chopped crisp onto skewers.

Grill the koftas for 3-4 minutes per side, or until they reach an internal temperature of 63Β°C.

Meanwhile, grill the vegetable skewers for 2-3 minutes per side, or until tender.
