Korean-Style Pork Wrap
A flavorful and spicy Korean-inspired wrap filled with marinated pork, sauerkraut, and crunchy slaw.
Ingredients
- β1 pound Pork shoulder
- β2 teaspoons Festive Korean chili flakes (gochugaru)
- β2 tablespoons Sesame oil
- β1 cup Sour kimchi, chopped
- β1 cup Sauerkraut
- β1 Large flour tortilla
- β1/4 cup Green onion, thinly sliced
- β1/2 cup Cucumber, sliced
- β1 tablespoon Toasted sesame seeds
- β1 cup Crunchy slaw (store-bought or homemade)

1. In a large bowl, whisk together chili flakes, sesame oil, and 2 tablespoons of water to make the marinade.

2. Add the pork shoulder to the marinade and refrigerate for at least 2 hours or overnight.

3. Preheat a grill or grill pan to medium-high heat. Remove the pork from the marinade, letting any excess liquid drip off.

4. Grill the pork for 5-7 minutes per side, or until it reaches an internal temperature of 145Β°F.

5. Let the pork rest for 5 minutes before slicing it thinly against the grain.

6. Warm the tortilla by wrapping it in a damp paper towel and microwaving for 20-30 seconds.

7. Assemble the wrap by spreading a layer of sauerkraut on the tortilla, followed by sliced pork, chopped kimchi, cucumber, green onion, and a sprinkle of toasted sesame seeds.
