Vietnamese Chicken Pho
A classic Vietnamese noodle soup made with chicken, aromatics, and a flavorful broth.
Ingredients

- β2 tablespoons Vietnamese chicken pho spice blendavailable at most Asian markets
- β1 medium onionsliced
- β2 inches gingersliced
- β2 whole star aniseoptional
- β1 cinnamon stickoptional
- β2 tablespoons fish sauceavailable at most Asian markets
- β2 tablespoons soy sauceavailable at most Asian markets
- β1 tablespoon sugaroptional
- β1 pound rice noodlesavailable at most Asian markets

Heat oil in a large pot over medium-high heat.

Add sliced onion and cook until browned, about 5 minutes.

Add sliced ginger and cook for 1 minute.

Add chicken and cook until browned, about 5 minutes.

Add Vietnamese chicken pho spice blend, fish sauce, soy sauce, and sugar. Cook for 1 minute.

Add 4 cups of water and bring to a boil.

Reduce heat to low and simmer for 10 minutes.

Add star anise and cinnamon stick, if using.

Cook rice noodles according to package instructions.

Assemble pho by placing cooked noodles in a bowl and ladling hot broth over the top.
