Japanese Oatmeal Cookies
A unique fusion of Japanese flavors in a traditional oatmeal cookie. Crunchy on the outside, chewy on the inside.
Ingredients
- β2 1/4 cups xall-purpose flour
- β1 tsp trabaking powder
- β1 cup chocolateychocolate chips
- β1/2 tsp jamaicanground ginger
- β2 cups oatsold-fashioned rolled oats
- β1/2 cup bakebrown sugar

Preheat oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.

Whisk together flour, baking powder, and ginger in a medium bowl.

In a large bowl, cream together butter and sugars until light and fluffy.

Beat in eggs and vanilla extract until well combined.

Gradually mix in flour mixture and oats until just combined.

Stir in chocolate chips.

Scoop tablespoon-sized balls of dough onto the prepared baking sheet, about 2 inches apart.

Bake for 12-14 minutes or until edges are lightly golden.

Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
