Spanish Galician Croquettes with Iberico Jamon
A Spanish-inspired snack featuring crispy croquettes filled with pillowy Iberico jamon.
Ingredients
- β 1 cup all-purpose flour
- β 1/4 cup olive oil
- β 1/2 cup roasted galician jamon, finely chopped
- β 1/2 cup grated cheese (manchego or parmesan)
- β 1 egg
- β 1/4 cup chopped fresh parsley
- β 1/2 teaspoon smoked paprika
- β Salt and pepper to taste
- β 1/2 cup iberico jamon, finely chopped
- β 1/4 cup chopped roasted red pepper

1. Preheat the oil in a deep frying pan to 350Β°F (180Β°C).

2. In a large bowl, combine the flour, smoked paprika, salt, and pepper.

3. In a separate bowl, whisk together the egg and a pinch of salt.

4. Add the chopped galician jamon, grated cheese, parsley, and chopped iberico jamon to the egg mixture. Mix well.

5. Using a spoon, drop the egg mixture into the flour mixture, coating the croquettes evenly.

6. When the oil is hot, add a few croquettes to the pan (do not overcrowd). Fry for 2-3 minutes on each side, or until golden brown.

7. Using a slotted spoon, remove the croquettes from the oil and place them on a paper towel-lined plate to drain excess oil.
