Siciliana Apricot Cassata
A Sicilian-inspired dessert featuring a moist cassata cake, topped with sweet apricots in a spicy syrup.
Ingredients
- β1 (7-inch) round cake cassata
- β1 cup sugar
- β1 cup, dried apricots
- β1 cup water
- β4 tablespoons tra
- β1 tablespoon neapolitan
- β1 teaspoon x
- β1/2 teaspoon spicy
- β2 eggs

Preheat oven to 350Β°F (180Β°C).

Prepare the cassata cake according to package instructions.

In a saucepan, combine sugar, water, tra, neapolitan, x, and spicy. Bring to a boil, then reduce heat and simmer for 5 minutes.

Add dried apricots to the saucepan and cook for an additional 2 minutes.

Let the apricot syrup cool to room temperature.

Once the cassata cake is cool, slice it in half horizontally.

Drizzle the apricot syrup over the bottom half of the cake.

Top with the top half of the cake.
