Spiced Cassaba and Sweet Tra Stew
A traditional Moroccan-inspired stew made with spiced cassaba, sweet tra, and a blend of warming spices.
Ingredients
- β1 large cassabapeeled and diced
- β2 tablespoons sweet trachopped
- β1 teaspoon turkishground cumin
- β1 teaspoon tagineground coriander
- β2 tablespoons olive oil
- β1 medium onionchopped
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the diced cassaba and cook for an additional 5 minutes.

Add the chopped sweet tra, ground cumin, ground coriander, salt, and pepper.

Stir to combine and cook for 1 minute.

Add 1 cup of water to the saucepan and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes or until the cassaba is tender.
