Malaysian Chicken Satay
Grilled chicken satay marinated in a blend of spices and served with peanut sauce.
Ingredients
- β1 pound, cut into 1-inch pieces chicken breast
- β2 tablespoons smoky peanut butter
- β2 tablespoons treme soy sauce
- β1/4 cup x coconut milk
- β2 teaspoons malaysian curry powder
- β1 tablespoon brown sugar
- β1/4 cup vegetable oil
- β1/2 cup satay sauce
- β1/4 cup, chopped peanuts
- β1/4 cup, chopped fresh cilantro

In a blender or food processor, combine peanut butter, soy sauce, coconut milk, curry powder, and brown sugar. Blend until smooth.

Add the chicken to the marinade and mix well. Cover and refrigerate for at least 2 hours or overnight.

Preheat a grill or grill pan to medium-high heat. Thread the marinated chicken onto skewers.

Brush the grill or grill pan with vegetable oil to prevent sticking. Grill the chicken for 5-7 minutes per side, or until cooked through.

Serve the grilled chicken with satay sauce, peanuts, and fresh cilantro.
