Venezuelan Vermicelli Stew
A hearty and flavorful stew originating from Venezuela. This recipe combines vermicelli noodles with a blend of aromatic vegetables and a hint of citrus.
Ingredients
- β8 oz Vermicelli noodlespreferably fresh
- β1 large Onionchopped
- β1 Citrusyjuice of 1 lime
- β1 tsp Venezuelanground cumin
- β3 cloves Garlicminced
- β2 medium Carrotspeeled and chopped
- β2 medium Potatoespeeled and chopped
- β1 cup Tomato saucehomemade or store-bought
- β2 cups Vegetable brothlow-sodium

Heat 2 tbsp of oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1 minute.

Add the chopped carrots and potatoes, cook for 5 minutes.

Add the vermicelli noodles, cumin, and vegetable broth. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.
