Hearty Stew
A comforting and flavorful stew made with tender Irish stewing beef, earthy potatoes, and a hint of xenial spices.
Ingredients
- β1.5 pounds Irish stewing beefcut into 1-inch cubes
- β2 cups Callaloochopped
- β3 large Earth potatoespeeled and cubed
- β1 teaspoon Xenial spicesa blend of thyme, rosemary, and bay leaves
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 tablespoons All-purpose flourfor dredging meat
- βto taste Salt and pepper

Preheat oven to 300Β°F (150Β°C).

Season the beef with salt and pepper.

Dredge the beef in flour, shaking off excess.

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Sear the beef until browned on all sides, about 5 minutes.

Add the onion and garlic to the pot and cook until softened, about 5 minutes.

Add the callaloo, potatoes, and xenial spices to the pot.

Pour in enough beef broth to cover the ingredients and bring to a boil.

Cover the pot and transfer it to the preheated oven.

Braise the stew for 2 1/2 hours, or until the beef is tender.
