Mexican Shrimp Ceviche
A refreshing Mexican dish made with prawns marinated in lime juice and mixed with spices, onions, and cilantro.
Ingredients
- β1 pound Large prawns
- β1/2 cup Lime juice
- β1/2 cup Diced onion
- β1/4 cup Chopped cilantro
- β1/2 cup Diced avocado
- β1/4 cup Jalapeno pepper
- β Salt and pepper
- β1/4 teaspoon Mexican oregano

Rinse the prawns under cold water and pat them dry with paper towels.

Cut the prawns into small pieces and place them in a large bowl.

Squeeze the lime juice over the prawns and let them marinate for at least 30 minutes.

Add the diced onion, chopped cilantro, diced avocado, and sliced jalapeno to the bowl with the prawns.

Season the mixture with salt, pepper, and Mexican oregano to taste.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Just before serving, give the mixture a good stir and adjust the seasoning if needed.

Serve the ceviche in small glasses or bowls and garnish with additional cilantro if desired.
