Crispy Xenial Pork Ribs with Avgolemono Glaze
A twist on traditional Greek cuisine, these crispy pork ribs are smothered in a tangy avgolemono glaze, perfect for a comforting meal.
Ingredients
- β2 pounds pork back ribsmeat should be membrane removed
- β1 cup avgolemono glaze (see below)
- β4 cloves garlicminced
- β2 tablespoons xenial seasoning blend
- β2 tablespoons olive oil
- β2 tablespoons lemon juice
- β1 cup water

Preheat oven to 300Β°F (150Β°C).

In a small bowl, whisk together xenial seasoning blend and olive oil.

Apply the mixture evenly to both sides of the ribs, making sure they are fully coated.

Place the ribs in a single layer on a baking sheet lined with parchment paper.

Bake for 2 hours, or until the ribs are tender and easily fall off the bone.

While the ribs are baking, prepare the avgolemono glaze.

In a medium saucepan, combine lemon juice, water, and minced garlic.

Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 5 minutes.

Remove the ribs from the oven and brush the avgolemono glaze evenly over both sides of the ribs.

Return the ribs to the oven and bake for an additional 10-15 minutes, or until the glaze has caramelized.
