Hearty Beef Stew
A comforting, slow-cooked stew perfect for a chilly evening. This recipe serves a crowd and is packed with tender beef and hearty vegetables.
Ingredients
- β1.5 pounds 1.5 pounds beef stew meatcut into 1 1/2-inch cubes

- β3 3 cloves garlicminced
- β2 2 medium carrotspeeled and chopped
- β2 2 medium potatoespeeled and chopped
- β1 cup 1 cup beef brothwarmed
- β1 tablespoon 1 tablespoon tomato pasteoptional
- β1 teaspoon 1 teaspoon dried thymedried
- β1 1 bay leaffresh

Brown the beef in a large Dutch oven over medium-high heat.

Remove the browned beef from the pot and set aside.

Add the chopped onions to the pot and cook until they're softened and lightly browned.

Add the minced garlic and cook for 1 minute.

Add the chopped carrots and potatoes to the pot and cook for 2-3 minutes.

Stir in the warmed beef broth, tomato paste, and thyme.

Return the browned beef to the pot and bring to a boil.
