Baingan Bharta
A popular Indian dish made from roasted eggplant, onions, garlic, and spices. It's a great side dish or main course.
Ingredients
- ●2 medium Eggplant (Baingan)Roasted
- ●1 large OnionChopped
- ●3 cloves GarlicMinced
- ●1 inch GingerGrated
- ●1 medium TomatoDiced
- ●2 tablespoons Ghee or oilFor sautéing
- ●1 teaspoon Red chili powderAdjust to taste
- ●1 teaspoon Garam masalaAdjust to taste
- ●to taste SaltAdjust to taste
- ●chopped Fresh cilantroFor garnish
Instructions

Preheat the oven to 400°F (200°C).

Roast the eggplant in the oven for 30-40 minutes, or until the skin is charred and the flesh is tender.

Once the eggplant is cool enough to handle, peel off the skin and chop the flesh into small pieces.

Heat ghee or oil in a pan over medium heat.

Add the chopped onion and sauté until it's translucent.

Add the minced garlic and grated ginger and sauté for another minute.

Add the diced tomato and sauté for 2-3 minutes.

Add the roasted eggplant, red chili powder, garam masala, and salt. Mix well.

Sauté for another 2-3 minutes, stirring occasionally.

Garnish with chopped fresh cilantro and serve hot.
