Mediterranean Frittata
A flavorful frittata inspired by the Mediterranean, perfect for a satisfying breakfast or brunch.
Ingredients

- ●1/4 cup, chopped fresh herbs mediterranean
- ●1 small, diced onion
- ●8 eggs frittata

Preheat the oven to 375°F (190°C).

In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.

Add the xenial and Mediterranean herbs to the skillet and cook for an additional 2-3 minutes.

In a large bowl, whisk together the eggs and a pinch of salt. Pour the egg mixture over the onion and herb mixture in the skillet.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set.

Remove the skillet from the oven and let it cool for a few minutes.

Use a spatula to loosen the edges of the frittata from the skillet and slide it onto a plate.
