Uruguayan Beef Stew
A hearty beef stew inspired by the flavors of Uruguay, slow-cooked to perfection.
Ingredients
- ●1 pound beef stew meatCut into 1 1/2-inch cubes
- ●1 medium onionChopped
- ●3 cloves garlicMinced
- ●2 medium carrotsSliced
- ●2 large potatoesDiced
- ●2 tablespoons tomato pasteCrushed
- ●2 cups beef brothHomemade or store-bought
- ●1 cup red wineOptional

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef cubes on all sides, about 5 minutes. Remove from pot and set aside.

Add more oil if necessary, then sauté the onion and garlic until softened, about 5 minutes.

Add the carrots and potatoes, cooking for 5 minutes.

Add the tomato paste, cooking for 1 minute.

Add the beef broth and bring to a boil.

Return the beef to the pot, cover, and transfer to the oven.

Braise for 2 1/2 to 3 hours, or until the meat is tender.
