Smoked Lotus Root Tagine
A hearty, smoky vegetarian tagine with lotus root and eastern spices.

- β2 large lotus root
- β2 tablespoons olive oil
- β1 medium onion
- β3 cloves garlic
- β1 teaspoon smoked paprika
- β1 teaspoon cumin
- β1 teaspoon coriander
- βto taste salt
- βto taste black pepper

Instructions

Heat the olive oil in a large tagine or Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.
