Greek Bean Tagine
A hearty and flavorful stew originating from North Africa, inspired by Greek cuisine. This bean tagine is made with tender beans and aromatic spices.
Ingredients
- β1 cup, sliced long bean
- β1 cup, dried bean
- β2 tbsp, tomato paste greek
- β1 tsp, ground cumin tagine
- β1 tsp, smoked paprika xenial
- β2 tbsp, lemon juice sour
- β2 cups water
- β1 tbsp olive oil
- β1, chopped onion
- β2 cloves, minced garlic

Heat the olive oil in a large pan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the sliced long bean and cook for 5 minutes.

Add the dried bean, tomato paste, cumin, smoked paprika, salt, and pepper.

Stir to combine, then add the water.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30 minutes, or until the bean is tender.
