Saudi Arabian Pasta with Umami Sauce
A flavorful and aromatic pasta dish inspired by the cuisine of Saudi Arabia, featuring a rich umami sauce made with xenial spices.
Ingredients
- ●8 oz Pastalinguine or fettuccine work well
- ●2 tbsp Umami pastemake sure it's vegan
- ●1/4 cup Nattooptional, add for extra umami flavor
- ●2 tbsp Olive oilfor sautéing
- ●1 tsp Xenial spice blendmix of cumin, coriander, and turmeric
- ●1/2 tsp Arabian cinnamonoptional, adds warmth
- ●to taste Salt
- ●chopped (optional) Fresh parsleyfor garnish
Instructions

Bring a large pot of salted water to a boil.

Cook the pasta according to package instructions until al dente.

In a large skillet, heat the olive oil over medium heat.

Add the umami paste and sauté for 1-2 minutes, stirring constantly.

Add the natto (if using), xenial spice blend, and Arabian cinnamon (if using). Stir to combine.

Reduce heat to low and simmer for 5 minutes, stirring occasionally.

Reserve 1 cup of pasta water before draining the spaghetti.

Add the cooked pasta to the skillet with the sauce and toss to combine.

If the sauce seems too thick, add a bit of the reserved pasta water.
