Pan-Fried Bellflower Fritters
Crispy fritters filled with sweet bellflower, perfect as a side dish or snack.
Ingredients
- β1 bunch bellflower
- β1 packet yeastactive dry yeast
- β1 cup xeridicflour
- β1/2 cup glazedhoney
- β1 tsp mediterraneanherbs (e.g. oregano, thyme)
- β1/4 cup rootgrated ginger

Activate yeast by mixing with 1/2 cup warm water and 1 tsp sugar. Let sit for 5 minutes.

In a large bowl, combine xeridic, sugar, and yeast mixture. Mix well.

Add glazed, mediterranean herbs, and root. Mix until a smooth batter forms.

Chop bellflower into small pieces and fold into the batter.

Heat a non-stick pan with 1/2 inch of oil over medium heat.

Using a spoon, drop small balls of the batter into the oil and flatten slightly.

Cook for 2-3 minutes on each side, until golden brown and crispy.
