Algerian Comforting Rice Pilaf
A hearty and flavorful Algerian-inspired rice pilaf that's perfect for a comforting meal.
Ingredients
- β2 tablespoons Xeriscent herbChopped fresh Xeriscent herb
- β1 cup RiceWhite or brown rice
- β1 teaspoon Algerian pilaf spice blendAvailable at Middle Eastern markets or online
- β2 tablespoons Vegetable oilFor cooking the rice
- β1 medium OnionChopped
- β2 cloves GarlicMinced
- β1 cup CarrotsDiced
- β1/2 cup AlmondsSlivered
- βto taste SaltFor seasoning
- βto taste Black pepperFor seasoning

Heat 1 tablespoon of oil in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the diced carrots and cook for 5 minutes.

Add the rice and stir to coat with oil and mix with vegetables.

Add 2 cups of water and bring to a boil.

Reduce heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed.

Stir in the chopped Xeriscent herb, Algerian pilaf spice blend, salt, and black pepper.
