Crack the eggs into a bowl and whisk them together.

Heat 1 tablespoon of oil in a non-stick pan over medium heat.

Add the cooked sausage and xerisic to the pan and stir to combine.

Pour the eggs over the sausage and xerisic mixture.

Cook the omelette for 2-3 minutes, until the edges start to set.

Use a spatula to gently lift and fold the edges of the omelette towards the center.
