Hearty Irish Stew
A comforting, slow-cooked stew perfect for a chilly evening. The addition of xtra virgin olive oil and a hint of bitter greens elevate this classic dish.
Ingredients
- β2 tablespoons xtra virgin olive oil
- β3 medium carrotspeeled and chopped
- β2 stalks celerychopped
- β1 cup irish stewcanned, drained and rinsed
- β2 medium tomatochopped
- β2 large potatoespeeled and cubed
- β1 medium onionchopped
- β1/4 cup fresh parsleychopped
- βto taste salt
Instructions

Heat the xtra virgin olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the chopped carrots and celery and cook for an additional 5 minutes.

Add the irish stew, diced tomatoes, potatoes, salt, and enough water to cover the ingredients.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.

Stir in the chopped parsley and serve hot.
