Seafood Pasta
A light and flavorful Italian-inspired dish featuring seafood and pasta.
Ingredients
- ●12 oz linguinepreferably whole wheat
- ●1 lb shrimpfresh or frozen, thawed
- ●1 cup musselsfresh or canned
- ●3 cloves garlicminced
- ●2 tbsp olive oilextra virgin
- ●2 tbsp lemon juicefreshly squeezed
- ●1/4 cup parsleychopped
- ●to taste saltpreferably sea salt
- ●to taste black pepper
Instructions

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente.

In a large skillet, heat the olive oil over medium-high heat. Add the garlic and sauté for 1-2 minutes until fragrant.

Add the shrimp and mussels to the skillet. Cook for 2-3 minutes until the shrimp turn pink and the mussels open.

Add the lemon juice to the skillet and toss to combine. Season with salt and black pepper to taste.

Add the cooked linguine to the skillet and toss to combine with the seafood and sauce.

Serve immediately, garnished with parsley.

Optional: add some xtra grated Parmesan cheese on top for extra flavor.
