Lumpia Stuffed Root Vegetables with Filipino Salsa
A twist on traditional German root vegetables, filled with lumpia and served with a tangy Filipino-inspired salsa.
Ingredients
- β1 medium-sized root vegetable per serving root vegetables (carrots, beets, parsnips)
- β4-6 wrappers lumpia wrappers
- β1/4 pound, sliced filipino sausage
- β1/2 cup, chopped deodeokoptional
- β2 tablespoons xtra virgin olive oil
- β1/4 cup briny sauce

Preheat oven to 400Β°F (200Β°C).

Peel and chop the root vegetables into 1-inch cubes. Place on a baking sheet and drizzle with olive oil. Roast in the oven for 20-25 minutes, or until tender.

While the vegetables are roasting, cook the lumpia wrappers according to package instructions. Set aside.

In a pan over medium heat, cook the sliced Filipino sausage until browned and crispy. Remove from heat and set aside.

In the same pan, add the chopped deodeok and cook until softened. Season with salt and pepper to taste.

Stuff each roasted root vegetable with a cooked lumpia wrapper, a few slices of sausage, and a spoonful of the deodeok mixture.

Serve with a side of briny sauce for dipping.

Garnish with chopped fresh herbs, if desired.
