Peruvian-Style Lomo Saltado
A classic Peruvian stir-fry dish made with beef strips, onions, tomatoes, and french fries, served with rice.
Ingredients
- β1 pound Lomo (thinly sliced beef strips)Sliced into thin strips
- β2 tablespoons Peruvian xtra-virgin olive oil
- β2 tablespoons ButteryMelted butter
- β1 medium OnionThinly sliced
- β1 large TomatoDiced
- β1 cup French friesCut into bite-sized pieces
- β2 teaspoons SaltadoPeruvian stir-fry seasoning
- βto taste Salt
- β4 fillets Fillets of fish (optional)For a seafood variation

Heat 1 tablespoon of Peruvian xtra-virgin olive oil in a large skillet over medium-high heat.

Add the sliced onions and cook until they start to brown, about 3-4 minutes.

Add the diced tomatoes and cook until they start to soften, about 2-3 minutes.

Add the sliced beef strips and cook until they are browned and cooked through, about 3-4 minutes.

Add the French fries and cook until they are crispy, about 2-3 minutes.

Add the melted butter and stir-fry seasoning, and cook for an additional 1-2 minutes.

Taste and adjust the seasoning with salt as needed.

Serve hot over a bed of rice.

If using fish fillets, cook in a separate pan with a little oil until cooked through.
