Mexican Quesadilla
A delicious Mexican-inspired quesadilla filled with xtra cheese, citrusy chicken, and fernbrake greens. Perfect for a quick and easy lunch or dinner.
Ingredients
- β1 cup shredded xtra cheese
- β1 breast, sliced citrusy chicken breast
- β1 cup chopped fernbrake greens
- β4-6 tortillas mexican tortillas
- β1 tsp mexican seasoning
- β2 tbsp olive oil
Instructions

Season the chicken breast with mexican seasoning and cook in a pan with olive oil until browned and cooked through.

In a separate pan, warm the tortillas over medium heat for 1-2 minutes on each side.

Assemble the quesadillas by placing a slice of chicken and some fernbrake greens onto half of each tortilla, then topping with xtra cheese.

Fold the tortillas in half and cook for an additional 2-3 minutes on each side, until the cheese is melted and the tortillas are crispy.
