Kenyan Mackerel Curry

- β2 tbsp xtra virgin olive oilfor cooking
- β2 tsp curry powderto taste
- β1 large onionchopped
- β3 cloves garlicminced
- β1 cup currystore-bought or homemade
- β1 can coconut milkfull-fat

Heat oil in a large pan over medium heat.

Add onion and cook until softened, about 3-4 minutes.
