Filipino-Style Fried Adobo Rice Bowl

- β1 cup xtra long grain ricepreferably day-old rice
- β4 slices crisp bacondiced
- β2 tsp filipino adobo seasoningstore-bought or homemade
- β1 medium tomatodiced
- β1/4 cup adobo saucestore-bought or homemade

Instructions

Heat 1 tsp of oil in a pan over medium heat.

Add diced bacon and cook until crispy, then set aside.

In the same pan, add the diced tomato and cook until softened.

Add the adobo seasoning and stir to combine.

Add 1 cup of cooked rice to the pan and stir-fry until combined with the tomato mixture.

Add the cooked bacon back into the pan and stir-fry for another minute.

Transfer the mixture to a serving bowl and drizzle with adobo sauce.
