Northern Irish Braised Beef
Tender beef in a rich, flavorful sauce, inspired by Northern Irish cuisine.
Ingredients
- β1.5 lbs (675g) beef
- β2 tbsp xtra virgin olive oil
- β1 large onion
- β2 medium carrot
- β2 stalks celery
- β2 tbsp all-purpose flourfor dusting
- β2 cups (475ml) beef broth
- β1 cup (235ml) red wine
- β6 slices crisp baconfor garnish

Preheat oven to 300Β°F (150Β°C).

Season the beef with salt and pepper.

Heat the oil in a large Dutch oven over medium-high heat.

Sear the beef until browned on all sides, about 5 minutes.

Remove the beef from the pot and set it aside.

Add the onion, carrot, and celery to the pot and cook until the vegetables are softened, about 5 minutes.

Add the flour to the pot and cook for 1 minute.

Add the broth, wine, and browned beef back to the pot.

Cover the pot with a lid and transfer it to the preheated oven.

Braise the beef for 2 1/2 hours, or until it is tender.

Remove the pot from the oven and let it cool slightly.

Skim off any excess fat from the surface of the sauce.

Slice the beef against the grain and serve it with the sauce spooned over the top.

Garnish with crisp bacon and serve hot.
