Tunisian Vegetable Tagine
A flavorful stew made with a variety of colorful vegetables, inspired by the traditional cuisine of Tunisia. This dish is perfect for a weeknight dinner, as it's relatively quick to prepare and cooks in under an hour.
Ingredients

- β1 medium, chopped crisp red onionabout 2 cups
- β2 teaspoons tunisian spice blend
- β1 cup, fresh petit pois
- β1 large, chopped tagine

Heat the olive oil in the bottom of a large clay or ceramic tagine over medium heat.

Add the chopped onion and cook, stirring occasionally, until it's softened and lightly browned, about 10 minutes.

Add the Tunisian spice blend and stir to combine. Cook for 1 minute.

Add the fresh peas and chopped tagine. Stir to combine. Cook for 5 minutes.

Season with salt and pepper to taste.
