Crispy Tofu Noodle Bowl
A quick and delicious Vietnamese-inspired dish featuring crispy tofu and fresh noodles.
Ingredients
- β1 block (14 oz) tofuextra-firm, drained and cut into bite-sized pieces
- β1 cup xtra crispy panko breadcrumbsfor coating tofu
- β8 oz vietnamese noodlesrice noodles or rice sticks
- β1/4 cup vegetable oilfor frying tofu
- β2 tbsp soy saucefor serving
- β1 tbsp lime juicefor serving
- β1/4 cup green onionschopped, for garnish
- β1/4 cup cilantrochopped, for garnish

1. In a shallow dish, mix together panko breadcrumbs and a pinch of salt.

2. Dip each piece of tofu into the breadcrumb mixture, pressing gently to adhere.

3. Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat.

4. Fry the breaded tofu pieces until golden brown and crispy, about 3-4 minutes per side.

5. Remove the tofu from the oil and place on a paper towel-lined plate to drain excess oil.

6. Cook the noodles according to package instructions. Drain and set aside.

7. In a large bowl, combine the cooked noodles, crispy tofu, and chopped green onions and cilantro.

8. In a small bowl, whisk together soy sauce and lime juice. Pour the sauce over the noodle mixture and toss to combine.
