Crispy Welsh Roast Fritters
A crispy twist on traditional Welsh roast fritters, made with a crunchy exterior and a tender interior.
Ingredients
- β1 cup xtra cornmealcoarse-ground
- β1 cup crispy roasted vegetableschopped
- β1/2 cup welsh roastchopped
- β1/4 cup sunday gravyhomemade or store-bought

In a large bowl, combine the cornmeal, roasted vegetables, and roast.

In a separate bowl, whisk together the sunday gravy and 1/4 cup of water.

Add the wet ingredients to the dry ingredients and stir until a thick batter forms.

Heat about 1/2 inch of oil in a large frying pan over medium-high heat.

Using a 1/4 cup measuring cup, scoop the batter into the oil and flatten slightly.

Fry the fritters for about 4 minutes on each side, or until golden brown and crispy.
