Crunchy Vegan Noodle Stir Fry
A simple and delicious vegan stir fry made with crunchy vegetables and served with noodles.
Ingredients
- β2 cups Crunchy Vegetables
- β1 cup Noodlespreferably rice noodles
- β2 tablespoons Chinese Almond Saucemake sure it's vegan
- β1/4 cup Almondsliced or slivered
- β1 tablespoon Xtra Virgin Olive Oil

1. Cook the noodles according to the package instructions and set aside.

2. Heat the olive oil in a large skillet or wok over medium-high heat.

3. Add the crunchy vegetables and cook until they're tender-crisp, about 3-4 minutes.

4. In a small bowl, whisk together the Chinese almond sauce and 1 tablespoon of water.

5. Pour the sauce into the skillet and stir to combine with the vegetables.

6. Add the cooked noodles to the skillet and stir to combine with the sauce and vegetables.

7. Sprinkle the sliced almonds on top and serve immediately.

8. Garnish with additional sliced almonds and crunchy vegetables, if desired.
