Songpyeon with Crunchy Xtra Topping
A traditional Korean dessert inspired by the flavors of crunchy snacks and sweet blackberries. Songpyeon are half-moon shaped rice cakes often filled with sweet sesame seeds.
Ingredients
- β1 package Songpyeon
- β1 cup, crushed Crunchy Xtraany crunchy snack like peanuts or churros
- β1 cup Blackberriesfresh or frozen
- β1 tablespoon Sesame seedsfor filling songpyeon
- β2 tablespoons Sugaroptional
- β2 cups Waterfor cooking songpyeon
Instructions

1. Rinse the songpyeon and soak them in water for 4-5 hours.

2. Drain and rinse the songpyeon, then cook them in boiling water for 10-15 minutes.

3. In a pan, heat the sesame seeds over medium heat, stirring constantly, until fragrant.

4. Add the sugar to the pan and stir until dissolved.

5. Fill each songpyeon with the sesame seed mixture.

6. In a separate pan, heat the crushed crunchy Xtra over medium heat.

7. Add the blackberries to the pan and stir until they start to break down.

8. Serve the filled songpyeon with the blackberry-crunchy Xtra topping.
