Crunchy Pad Thai
A classic Thai dish made with stir-fried noodles, vegetables, and a sweet and sour sauce.
Ingredients
- β1 package NoodlesRice stick noodles
- β1 cup CrunchyChopped peanuts
- β2 EggBeaten eggs
- β1 tablespoon XtraVegetable oil
- β2 tablespoons ThaiTamarind paste
- β2 cups SeeBean sprouts
- β1 cup EwSliced bell peppers

Cook the noodles according to the package instructions.

In a small bowl, whisk together the tamarind paste, vegetable oil, and 2 tablespoons of water.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chopped peanuts and cook for 2-3 minutes, or until fragrant.

Push the peanuts to one side of the skillet.

Add the beaten eggs to the other side of the skillet and scramble them until cooked through.

Mix the eggs with the peanuts.

Add the cooked noodles, bean sprouts, and sliced bell peppers to the skillet.

Pour the tamarind sauce over the top and stir-fry for 2-3 minutes, or until the noodles are well coated.

Serve hot and garnish with chopped peanuts and bean sprouts.
