Brazilian Chicken Stew
A hearty and flavorful stew originating from Brazil, made with tender chicken and rich spices.
Ingredients
- β1 pound boneless, skinless chicken breast or thighs chicken
- β2 tablespoons xtra virgin olive oil
- β1 large onion, diced onion
- β3 cloves, minced garlic
- β1 teaspoon chili pepper
- β1 teaspoon cumin
- β2 cups chicken broth
- β2 tablespoons tomato paste
- β1 (15 ounce) can dense red kidney beans, drained and rinsed

Heat oil in a large pot over medium-high heat.

Add the chicken and cook until browned, about 5-6 minutes. Remove the chicken from the pot.

Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

Add the chili pepper and cumin to the pot and cook for 1 minute.

Add the chicken broth, tomato paste, and browned chicken back to the pot.

Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 20-25 minutes.

Add the kidney beans to the pot and simmer for an additional 10 minutes.

Season with salt and pepper to taste.
