Hearty Beef Stew
A rich and flavorful stew made with tender beef and a variety of vegetables.
Ingredients
- β1 pound beef stew meatcut into 1 1/2 inch cubes
- β2 tablespoons xtra virgin olive oil
- β1 large onionsliced
- β1 medium daikonsliced
- β2 medium carrotssliced
- β2 large potatoessliced
- β2 cups beef broth
- β2 tablespoons tomato paste
- β1 teaspoon stew seasoning
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the sliced onion and cook until browned, about 5 minutes.

Add the sliced daikon and cook for another 5 minutes.

Add the beef stew meat and cook until browned on all sides, about 5 minutes.

Add the sliced carrots and potatoes, beef broth, tomato paste, stew seasoning, salt, and pepper.

Bring the mixture to a boil, then cover and transfer to the oven.

Bake at 300Β°F for 2 1/2 hours, or until the meat is tender.

Serve hot, garnished with fresh parsley if desired.
